QUICK AND EASY RV CAMPING MEALS AND MOTORHOME RECIPES

TUATUA FRITTERS

Gather around the table for quick and easy camping meals that will warm up your belly and fuel you for the long winter nights.


INGREDIENTS

One cup of self raising flour
Two eggs
One and a quarter cup of milk
One teaspoon curry powder
Two hundred and fifty grams of Tuatua meat, chopped into small pieces
One small onion
One tomato
Oil for fry pan
 

COOKING METHOD
Mix flour, eggs, milk and curry powder in a bowl. The mixture should soon resemble a batter consistency. Season if desired.  Finely dice onion and tomato. Mix Tuatua, onion and tomato into bowl to combine with batter mixture. Bring a frying pan to medium heat. Add a decent amount of oil to frying pan. Spoon mixture onto pan, turn when cooked half-way through. Fritters best cooked in batches. Ready when nicely golden brown on each side.. Sit back and enjoy! More motorhome recipes coming soon!

BEVERAGES

MULLED WINE

If you have a hankering for a glass of your favourite red over the cooler months, a mulled wine could be a refreshing take on your favourite tipple. Just sweet and spicy enough to warm you up on even the coldest of nights!


INGREDIENTS

One bottle of red wine, shiraz or merlot
A quarter of a cup of sugar or if you prefer maple syrup
One orange
Half a lemon
Half a cinnamon stick
Two whole nutmeg seems, broken up into smaller pieces
Six whole cloves
5cm piece of ginger, peeled and then cut into halves
Three tablespoons of Brandy (if desired)


METHOD

Add red wine and sugar (or maple syrup) to a small pot. Mix the spices in then bring pot to a simmer. After twenty minutes the mixture should have thickened. Cut the orange and lemons into 1cm slices. Pour the wine mixture into a larger pot and add citrus slices. In the larger pot, bring the wine slowly to a simmering heat. Turn off heat then let the wine sit for five minutes. Serve in mugs or heatproof glasses. Add or remove spices to achieve desired taste. A great way to experiment with whichever spices you have handy in your RV. Serves around four people.
